Review of Faba Bean Protein Accumulation Pattern and Structural Model

Abstract

Faba beans, the largest grain legume, are a valuable crop for sustainable agriculture and are recognized as an inexpensive source of protein. The two primary storage proteins in faba beans, albumins and globulins, are soluble in water and saline solutions. Albumins contain a higher amount of sulfur-containing amino acids than globulins. In fact, albumins are more abundant in sulfur-containing amino acids than globulins or other faba bean seed proteins. Currently, there are only about 109,822 protein structures deposited in the Protein Data Bank, the repository for protein three-dimensional structures. Accurate prediction of a protein’s tertiary structure is crucial for various bioinformatics applications, including the study of protein catalytic functions, activation mechanisms, and ligand docking in drug development. The homology modeling approach is effective when the sequence identity between the target and template sequences is sufficiently high (greater than 30%). X-ray crystallography is used to crystallize proteins, and X-ray diffraction is then employed to determine their structures. Due to the striking structural and sequence similarities between legumin and vicilin, it is believed that they share a common ancestral gene. However, there is a lack of information regarding the structural modeling of faba bean storage albumin proteins using simulation methods. The three-dimensional behavior of faba bean seed storage proteins depends on their structural makeup. The objective of this review paper is to gather information on faba bean proteins and their structural models from scholarly literature.
